Southerners love their desserts. Most traditional Southern restaurants serve several classics, and many families continue to offer, at least, something simple and sweet after the dinner meal.
When I was growing up, we always had dessert. Mom did more scratch desserts and most often Pound Cake. That went further and kept better with four kids in the family.
Over the years, a lot of Southern cooks have continued to make semi scratch desserts, but many combine some convenience products to cut the amount of time and work. Cherry Delight is once such quick and easy dessert which still passes the Southern “It better taste good” test.
Cherry Delight Recipe
Ingredients:
- 1 store bought Angel Food cake
- 1 pack 16 oz. cream cheese
- 1 cup sugar
- 2/3 cup evaporated milk (small can size)
- 1 cup chopped nuts (pecans are most often used in the South)
- 1 can of cherry pie filling 21 oz (sweetened type in thick filling)
- 1 12 oz. container Cool Whip
Directions:
- Break angel food cake into bite sized pieces in the bottom of a 9 x 13 casserole dish.
- Let the cream cheese sit out a bit to soften. This just makes it easier to mix.
- Mix together the cream cheese, sugar, and evaporated milk. Be sure you do not get condensed milk. It’s thick, and you need the thinner evaporated milk for mixing.
- Pour the cream cheese mixture over top of the crumbled angel food cake.
- Next layer the nuts on top of the cream cheese mixture.
- Pour the canned cherry pie filling over the nuts.
- Finally, spread the Cool Whip on top as a pretty and fluffy topping which will look like frosting.
- Refrigerator a couple of hours, at least, or overnight.
