Chicken casseroles are popular in the South, and a stuffing topped version is one of the favorites for family dinners and pot luck get-togethers.

Most Southern cooks have several go-to chicken casserole recipes that are served on a regular basis. Casseroles are easy to prepare and can be counted on to turn out pretty and tasty, so they can be served for a hearty dinner or for company or to take to community gatherings.

Using canned cream soup for the base of the casserole sauce and ready to mix stuffing bread, chicken casseroles are rather simple to make and fairly quick. Some Southern cooks boil chicken downs in bulk and bag in three cup portions and freeze to save time. Others may used canned chicken or deli chicken to streamline the process.

Southern Chicken Casserole with Stuffing Recipe

Ingredients:

  • 3 cups cooked chicken diced or broken into bite sized pieces
  • 1 can cream of chicken soup – 10 ¾ ounces
  • ½ cup regular milk
  • 1 to 1 ½ cup chicken broth
  • ½ cup chopped celery
  • ½ cup finely chopped onion
  • 2 cups herb stuffing mix (Pepperidge Farm etc.)
  • 1 egg beaten lightly
  • 1 TBS parley flakes

Directions:

  1. Spread chicken in the bottom of an oblong casserole dish around 2 quart in size with sides.
  2. Mix together the cream of chicken soup with the milk and pour evenly on top of chicken.
  3. In a medium sauce pan, heat broth and add celery and onion, cooking until vegetables are tender.
  4. Remove broth mixture from heat.
  5. Stir stuffing mix, egg and then parsley flakes in with broth mixture and stir well.
  6. Evenly spread the dressing mixture over top of the chicken in the casserole dish.
  7. Bake in preheated oven uncovered for 35 to 40 minutes at 350 degrees F or until lightly brown and bubbly around the edges.
