Zucchini may be a vegetable, but home cooks can do a lot with this summer squash including bake a delicious chocolate flavored squash cake.

When the zucchini come in, they certainly produce. Just ask any Southern gardener with a zucchini plant or two or more. You pick summer sqaush, and that just stimulates more production. Squash seem to grow overnight.

There are many ways to cook summer squash including frying squash in batter and a variety of casseroles, but zucchini also makes a good binder for a cake. Since zucchini is moist, the cake turns out super moist.

Chocolate Zucchini Cake Recipe

Ingredients

  • 1 cup butter or margarine
  • 2 1/2 cups sugar
  • 3 cups plain flour
  • 1/2 cup baking cocoa
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 3/4 tsp. salt
  • 4 eggs
  • 2 tsp. vanilla
  • 1 cup milk
  • 3 cups zucchini, shredded

Directions

  1. Cream butter and sugar.
  2. Add eggs and beat.
  3. Combine all dry ingredients.
  4. Pour part of dry stuff in and mix. Pour in some milk. Mix. Continue until all dry stuff and milk are mixed in. Add vanilla.
  5. Last thing--add the zucchini. Mix.
  6. Bake at 350 for about 40 minutes if using a long flat cake pan about 9 x 13 inches. It's a sheet type cake.

You can serve this cake plain, but it's really good with a sweet topping.

Sprinkle top with powdered sugar or frost with your favorite icing. Canned frosting is fine. Or, you can make this chocolate frosting.

Chocolate Frosting Recipe (Good on Chocolate Zucchini Cake)

Ingredients:

  • 1/2 cup margarine
  • 3 T cocoa
  • 3 T Coca Cola (or Pepsi)
  • 1 box (1 pound) powdered sugar
  • 1 cup nuts (optional)
  • 1 tsp vanilla

Directions:

  1. Bring margarine, cocoa and cola to boil in a sauce pan on top of the stove.
  2. Take off heat. Mix in other items.
  3. Pour over cake while it's still warm--between 5 and 10 minutes after it comes out of the oven.
  4. Let cool and then cut in squares and serve.

Have fun with zucchini. Anything so named should be a blast right? Try out the cake and frost it up if you have a real sweet tooth. It's a real winner and a tasty way to servce up some extra vegetables.

Quick Tip

One quick tip/note. If you're growing yellow or other summer squash, you can use those in place of zucchini. Yellow straight, crook neck, patty pan and other summer squash varieties can be substituted in almost all cases where zucchini is listed as an ingredient.

That cake looks delicious! I love chocolate and I like zucchini but would have never thought to put them together.

My cake turned out very gooey. I don't know if that was because it was so moist because of the moisture from the zucchini or because it was undercooked. I baked it for a very long time but I felt like no matter how long I baked it for, it just did not continue to cook or get any darker. What is wrong? Should I have dried the zucchini before putting it into the batter?
