Southerners love peanuts. They are a big cash crop in the area. You can drive through the South and see the plants but not the peanuts (since they grow underground). And, you can pick up bags of Southern grown peanuts at gas stations, roadside stands, and in grocery stores all across the South. Of course, you can get peanuts all across the country, since they pack and ship well and are used to make all kinds of other products like peanut butter. That’s good. Peanuts are tasty, and they are a good source of protein.
One Southern favorite recipe featuring peanuts is peanut brittle. Again, you can find loads of peanut brittles if you get down South for a visit. If not, you can make your own. There are lots of recipes for peanut brittle. Today, I’ll share a microwave peanut brittle recipe that is quick and easy. After all, there are times when you want to make something yummy but do not feel like spending loads of time in the kitchen.
Southern Microwave Peanut Brittle Recipe
Ingredients:
- 1 cup sugar
- ½ cup light or white corn syrup (like Karo)
- 1/8 teaspoon of salt (if using salted peanuts – omit the salt)
- 1 tablespoon butter
- 1 ½ cup peanuts
- 1 teaspoon vanilla flavoring
- 1 teaspoon baking soda
Directions:
- Put sugar, corn syrup, salt, and butter in a microwave safe bowl. The bowl should be around 2 quarts in size.
- Microwave the mixture for 5 minutes, but stir about 3 minutes in and then continue microwaving.
- Add the peanuts. Stir. Microwave until the mixture is a light brown color – the color you typically see when you get peanut brittle. Microwave at 15 to 20 second increments, until you have the color correct.
- Remove bowl from microwave and immediately stir in vanilla and baking soda.
- Stir until light and fluffy.
- Pour peanut butter brittle mixture on to a greased cookie sheet with sides.
- Let the peanut brittle cool and then break into pieces.
- Store in an airtight container.
