Sinfully rich desserts are popular in the South, and Mississippi Mud Cake is one of the classic favorites.

Mississippi Mud Cake will make your eyes roll back in your head as they say in the South. This Southern cake is chocolate based with marshmallows, pecans, and a fudge-like frosting. The cake is quite rich obviously (and certainly not a diet food), and it is a pretty cake that folks look around for at pot luck dinners and community gatherings.

Mississippi Mud Cake Recipe

  • 2 cups sugar

  • 1/3 cup baking cocoa
  • ¼ teaspoon salt

  1. Cream together the sugar and shortening.
  2. Add eggs one at a time and mix in well.
  3. Add vanilla flavoring and mix until smooth.
  4. Sift together flour, cocoa, and salt and then add to the butter mixture a little at a time and mix until smooth.
  5. Stir in nuts.
  6. Spread mixture evenly into a greased 9 x 13 or similar sized baking dish.
  7. Bake at 350 degrees F (preheated) for around 35 minutes or until a toothpick comes out clean.
