Peanut Butter No Bake Cookies are similar to the popular Chocolate No Bake Cookies with oatmeal, but the flavor is peanut butter for those who do not like chocolate or just want to change things up a bit.
Drop cookies are a good starter recipe for pre-teens and teens. They are easy to mix up and almost always turn out perfect. The key is be sure and time the boiling. If no bake cookies are boiled too long, they taste dry. If they are not boiled long enough, they may not set up. Setting (firming) up can also be an issue on rainy or snowy days. The extra moisture in the air seems to have an impact on the cookies getting firm so that they will lift off the tin foil (or aluminum foil).
Another plus is that no bake cookies take less time than traditional cookies. They are boiled all at once and then just dropped immediately to set up. That’s much quicker than baking batch after batch of cookies.
The taste on this sort of cookie really is more like a candy than a cookie. The base is a sugar rather than a flour, so the texture is creamier rather than cake-like.
Peanut Butter No Bake Drop Cookie Recipe
- 1 cup sugar
- ¼ cup butter (margarine will also work)
- 1/3 cup evaporated milk (not condensed milk)
- ¼ cup peanut butter (crunchy)
- ½ tsp. vanilla flavoring
- 1 cup oatmeal (quick cook)
- ½ cup red skinned peanuts (also called Spanish peanuts)
Directions:
- Put the butter in a good, heavy saucepan and let it begin to melt at a low-medium heat.
- Once the butter is melted enough to coat the bottom of the pan lightly, add the sugar and evaporated milk and stir until well mixed.
- Turn the heat up to medium-high and bring to a boil. If the batter is popping up, then turn the heat down a little. You want a rolling but not popping boil.
- Boil for 3 minutes while stirring. Time this closely.
- Remove from heat and stir in peanut butter and vanilla and then the oats and peanuts. It is a good idea to have these measured and ready, because they need to go in and be stirred quickly.
- Drop by spoon fulls onto a good sized sheet of tin foil (around 18 inches – but be ready to put out another sheet of tin foil if you space wider). Keep the cookie drops fairly small, since they are quite sweet.
*This recipe makes around 30 small drop cookies depending on the size of the drops.
