One of our favorite cold weather cookie recipes is Pumpkin Cookies. They have that rich fall/winter smell and flavor and just feel like holiday or company cookies.
Just making these pumpkin cookies is fun, since the pumpkin and seasonings smell so fabulous. Then, you put the pumpkin cookies in the oven, and the whole house smells like you bought high end pumpkin or winter spice candles when you just broke out the mixing bowl and cookie sheets.
When you’re finished with the pumpkin cookies, you have soft and flavorful cookies that are different from most of the usual holiday cookies. The classic holiday cookies are great, but it’s nice to have something a little different too, and this is one of my best cookie recipes that is not a repeat of all the other cookies on the dessert table.
Pumpkin Cookie Recipe
- ¾ cup butter or margarine - softened
- 2/3 cup light or dark brown sugar packed
- 2 eggs
- 1 ½ teaspoons vanilla
- 1 cup pumpkin puree (not canned pie filling – just regular pumpkin without flavorings)
- 2 cups plain flour
- ½ tsp. baking powder
- ½ tsp. baking soda
- 1/8 tsp. salt
- 2 ½ teaspoons pumpkin pie seasoning
- 1 cup craisins (dried cranberries)
- 1 cup nuts chopped
Directions
- Combine butter, brown sugar, eggs, and vanilla and beat until fluffy.
- Add the canned pumpkin and mix well.
- Add flour, baking powder, baking soda, salt, and pumpkin pie spice seasoning and mix well.
- Mix in the craisins and nuts with a spoon.
- Drop by blops about the size of a walnut on an ungreased cookie baking sheet.
- Bake for about 10 to 12 minutes at 375 degrees F or until lightly browned.
Pumpkin Dip - If You're Not Up to Cookies
If you're not big on baking but want some pumpkin flavor in your home, then try out Pumpkin Dip. You can use store bought ginger snap cookies or sugar cookies and dip them in the pumpkin mixture.
