I don't think it gets any more southern than pan fried potatoes. Fried potatoes are easy to cook, and they are very filling.

If you need to feed a hungry family after a long day, these southern potatoes really hit the spot. We have pan fried potatoes about once a week, and my boys are always thrilled when they see me heating up the skillet.

Items you'll need for Pan Fried Potatoes:

  • Potatoes - (we use about 5-6 for a family of four)
  • Onion (optional)
  • Seasonings (garlic, onion salt, savory, lemon-pepper, any family favorites)
  • Butter/margarine (around 2 T)
  • Skillet
  • Skillet Lid

Any potatoes are fine. The firmer ones hold together better. If you use new potatoes (ones with thin skins), then don't worry about peeling. Just wash and slice with skins and all. If the potatoes are older or if the skins are thicker, you'll probably want to peel them.

Then, cut the potatoes in round slices about the thickness of an iPod Nano or think of a Hershey candy bar for cutting thickness (if you're not up on the new tech stuff). Try to keep the slices fairly similar in terms of thickness. It doesn't have to be real exact, but you don't want some potatoes an inch thick and others like paper.

Heat the butter/margarine in a skillet. Our skillet where I use 5-6 medium potatoes is about 12 inches. I generally use the Lodge cast iron, but I also have a coated non-stick pan that I use particularly if the potatoes are not as firm.

You can heat the pan while you're cutting the potatoes. Just keep an eye out and don't scorch the butter.

You want the butter in the low to low-medium range. If you hear a sizzle when you add the potatoes, then go a little lower. Otherwise you'll burn the potatoes on the bottom.

You can layer the potatoes and put onion and seasonings in a couple of time, or you can put all the potatoes in the pan and top with onion and seasonings. Since these are turned, the flavors do mix fine.

I usually put the onions on top and in wedges. My boys don't really like onions. They're easier to spot and pick out in wedges and still add that little flavor oomph. Also, the onions cook a little faster than the potatoes, so they'll burn if you have them on the bottom too soon.

Put a lid on the pan, but cock it a bit. You don't want too much moisture, but the potatoes cook much faster with some coverage.

Let the potatoes sizzle along. They'll start to look sweaty. Then, you'll start to smell the onions cooking. This is about 10 minutes from the time you put the potatoes in the pan.

Use a turner to flip the bottom potatoes up. Shift the potatoes around a bit to get the ones on top down to the bottom. Be gentle, or you're potatoes will start to fall apart.

You really don't want to flip the potatoes but a couple of times during the cooking. They need to be turned to get them all cooked, but they look prettier if you play with them less.

If the potatoes start to look dry, add some more butter. Just cut a little chunk and put it on top. It will melt down to the bottom.

I like my Pan Fried Potatoes crispy and light to dark brown. My sons like them soft and not colored. I take the top off when the potatoes are soft and let them cook a little longer so that the bottom layer is crispy. Then, I serve the boys first from the top softer potatoes and take the ones on the bottom. Generally these potatoes are served with the darker and lighter potatoes mixed. It's a nice flavor contrast, though I can't sell my boys on it.

All in all, it takes 20 minutes or so to make Pan Fried Potatoes. It does depend on how high you have the heat and how many potatoes are in the pan. But, that's a good ballpark figure.

Pan Fried Potatoes are delicious with Electric Skillet Meat Loaf and catsup. A lot of southerners like catsup on both the meat loaf and the potatoes.

My boys also love Southern Skillet Corn Bread with Pan Fried Potatoes. Of course, they love my cornbread with anything.

I plan to mix these pan fried potatoes up with some smokey chipotle flavored burger meat with a side of sour cream.

lightly brown 1 package of lean ground beef
4 minutes to finish start adding spice
cummin and chili powder + garlic salt to preference
2 tablespoons of Smokey Chipotle sauce

serve fried potatoes as the base, sprinkle burger on top
serve sourcream on the side

optional, garnish with sprinkled cheddar cheese and some stipped raw cabbage on the side

I fry potatoes often and was looking for something different. Your recipe isn't different from my usual, but I loved your comments, so I followed your instructions. And loved the potatoes(Our Way is is the perfect way for me, I guess). **** And, on an unrelated note, just because your sons don't like onions does not make them spoiled. Geesh!

My girls loved these as did my husband and i. And why in the world woul.d you say that this ladies boys are spoiled??? You must not have kids. And i am sure that there are things that you dont like to eat so i guess you are spoiled to. I thought that comment was rude you dont even know this lady or her boys... I know exactly what the person means by saying those boys are spoiled. When I was growing up, if we didn't like what was on the table, we didn't have to eat it. But, we didn't dare ask for something different. "This ain't a restaurant, and I'm not your waitress," my Mom would say.

Nope! The person's "spoiled" comment wasn't rude at all. What's rude is to not appreciate what dear ole Mom has worked to prepare.

Horrible. We russians usually cut potatoes in pieces about an inch length and half of a finger thickness, fry them till they're crispy and it's tasty to add an egg in it before it's ready.

I think that reciepe is as simple as it gets I'm a cook also and wanted to look how other people are cooking potatoe I usually use olive oil then add a little water to steam them and me and my family enjoy! Great job I was impressed.

I was told growning up that if I didn't like what was put in front of me to eat then I didn't eat supper now I think that womens kids are spoiled if they would try something new every once in a while they might like it I like onions with my fried potatoes I live onions anyways

AWESOME! Thank you for breaking it down just like you were here in my kitchen helping me cook. And who cares if you don't make your kids eat onions, there are some parents who make ENTIRELY different meals for their kids, at least you are all eating the same thing and eating it together. Some kids do not even get family meal time.

WHO WROTE THIS????....Ive tried to cook taters like my mom did for the last 20 years (she passed away about 20 years ago) but never quite got it right. I followed this recipe, added the onions for the last 10 minutes of cooking time and BAM... just like Momma used to make. I just made this recipe--- it never occurred to me to use butter--- I didn't have any oil so i googled buttered fried potatoes---I was desperate.Oooh la-la! Very, very tasty. I usually cannot eat fried potatoes without hot sauce..and this time I didn't miss it so much. I'll be making this again.

Pretty much what me, my mama and grandma do (did ). Cept we ALWAYS use bacon grease instead of butter, cause that stuff burns too easy. Always cast iron. Low and slow after the initial sizzle. Takes at least an hour for 2 or 3 biggins. Add onions and seasonings in layers at the beginning then ....DO NO MESS WITH THEM! Leave em' be till they get good and brown on that side. Flip and repete in as bigga chunks as you can. Flip and repete and so on. It's important to only flip when they're stuck toghether and brown. MMMMM Porkchops "N" Eggs too!

Totally enjoyed the article!! As for some of these comments: seriously people? If her boys are spoiled, it's her business...leave it be. As for the "Russian" who thought this was horrible: we "Americans" also cut potatoes lengthwise, the size of a finger but we call those fries...a little diversity and common sense never hurt anyone dear.

Made this recipe tonight following your excellent instructions to a tee! :) Slicing potatoes the thickness of a Hershey candy bar was a perfect example for me... I don't fry potatoes but had the urge to make some tonight! :) My husband enjoyed the potatoes so much and said... "the potatoes taste G.R.E.A.T.!!!" Made a spinach, onion, garlic, and bacon frittata to go with these potatoes! It was all yum, yum, and more yums!!!

Thanks for the specific directions. They were a big help!
